Easy Turkey Chili

This year my dear father who loves to cook, made at 17 lb turkey for 5 people. That’s right 17 lbs for 5 people. That’s 3.5 lbs per person! Obviously, that’s where I get my need to cook way too much.

Anyways, with that much turkey, we ended up with TONS of leftovers. After awhile turkey soup, turkey pot pie, and turkey sandwiches started to all taste the same, so I adapted my chili recipe with ingredients I already had in the house and voila! Turkey Chili.

The best part about this chili is that it took me about 30 minutes to make, has very simple ingredients that you probably already have on hand, and it was surprisingly yummy! The bad news is I’m really, really terrible with writing down measurements with my experiments, so please let me know how you like it…particularly if you try some new spices with it!

Easy Turkey Chili Ingredients

  • 1 can of beans, drained and rinsed (I used kidney beans)
  • 1 can of tomato sauce (add water if 1 can is not enough liquid)
  • 1/2 chopped onion
  • Leftover Turkey (about 1lb or less)
  • 1 tsp garlic powder (fresh will work, too!)
  • 1 tsp cumin
  • 1 tsp Southwest Spice
  • 1 tsp salt
  • Butter or oil to cook onions

Optional extras: Sour Cream and Shredded Cheddar cheese to taste!

Instructions

  • In a medium saucepan, add butter and onions on medium heat and cook until onions are translucent
  • Add all other ingredients to saucepan, stir well, and bring to a boil on high heat
  • Then, turn heat to low, cover and let simmer for 20-30 minutes
  • Pour into a bowl, add sour cream and cheese, and Enjoy!

Variations:

  • Spices: If you don’t have a southwest mix, typical chili spices will work just as well
  • Veggies: If you want a bit more southwest, add corn or peppers for a bit of variety!
